I toast all those who work in the hospitality industry.
To you I lift my glass of 2005 Louis Michael & Fils Chablis. I hope you can enjoy the wine as I do. It has a pale straw color. The nose has a floral aroma to it with maybe some under-ripe pears. The wine has a very crisp, clean taste to it with strong flavors that give a nice balanced finish to the wine.
We started to carry this earlier in the summer and it has since become one of my favorite summer wines. I find its got more complexity and body than most sauvignon blancs, but it much easier to drink than many of the larger chardonnays.
Although I'm new to the wine collecting thing, I've grabbed a case of it to see what it is like as it ages (if I can hold of from drinking it all down now). For now, I'm going to try and think of an excuse to prepare some oysters and a light lime chipotle zabaglione to go with it.
